With spring comes plenty of sunshine, the days are getting longer, and the last snow is finally melting. The first nettles are already sprouting around our garden - a clear sign that nature is awakening and gifting us with its fresh treasures. But instead of avoiding nettles, as many might do, I can happily reassure you: they are not only edible, but a real highlight - and with my mum's recipe, I will show you how to conjure up a delicious, creamy soup from these supposedly ‘stinging plants’.
I can still vividly remember how, as a child, I was always allowed to pick nettles in the garden - it was my job to collect as many as possible. The saying ‘the more, the better’ always worked for us. You have to be careful when picking the nettles as they can ‘sting’ you quickly. A well-intentioned insider tip from me: gloves are your best friends! :)
